Recipes & Spicesin the Maldives

This is the complete Shan range as carried in the Maldives — 44 lines, imported from Pakistan directly by Sosun Fihaara. It covers both halves of the brand: the prepared recipe mixes, and the single spices underneath them. The biryani mixes are the anchor: Bombay, Sindhi, Karachi beef, Memoni mutton, Malay chicken, fish, pilau and the plain biryani mix. The curry and recipe masalas run to butter chicken, tikka masala, tandoori masala, chicken masala, meat masala, korma and chicken white korma, kitchen king, chana masala, daal makhni, dhal curry, aaloo bhaji, sambar, rasam, pani puri and fried fish seasoning, plus Chinese egg fried rice and beef or chicken chilli mixes and a ginger garlic paste. The single spices sit beneath them — turmeric, red chilli, coriander, cumin, black pepper, ginger, garlic and curry powder, Zafrani garam masala, mustard seed, black cumin seed, fenugreek seed and leaves, bay leaves, red chilli crushed, and Himalayan pink salt in three grinds. Pack sizes run from 25g sachets through 35g, 40g, 50g, 60g, 100g, 150g, 165g, 200g, 300g and 340g to 400g, 500g, 800g and 1kg catering packs. Cases are configured at 12, 18, 24 or 48 units depending on the line, and several lines are quoted as dozen or carton units. Each product page lists what is carried for that line. The Sosun test kitchen has built recipes directly on this range — Shan butter chicken, Shan chicken tikka masala, Shan spicy dry aloo and Bombay biryani — which are a useful way to show the mixes in use to a chef or a retail buyer. Stock is held in temperature-controlled and dry warehousing in Malé and moves out on scheduled sea freight and speedboat runs from Malé harbour direct to resort supply docks across North and South Malé, Ari and Baa Atolls. Maldives FDA import permits, customs clearance and label compliance are handled in-house.
