Every dressing here is Remia, the Dutch sauce and dressing producer, brought in as a direct import. The range runs in two lines that matter to a buyer. The classic bottles cover blue cheese, caesar, French, garlic, Italian, thousand island and salad cream. The Salata line covers caesar, garlic, honey mustard, Italian, yoghurt and fine herbs, and is the line carried in the larger bottle for service volumes. Choosing between them is a question of throughput rather than flavour: a table or a small kitchen works through the 250ml bottle, while a salad section or a buffet line running the same dressing daily is better served by the Salata format. Blue cheese is the strongest-flavoured of the range and is used as a dip for wings and chicory as much as it is spooned over a wedge salad. Sosun Fihaara clears and warehouses this range in Malé — temperature-controlled and dry storage — and runs it out to over 150 resort supply docks and island supermarket groups on scheduled sea freight and speedboat services.
