Dessert Mixin the Maldives

This is the sweet end of the Shan range and it splits three ways. The custard powders — vanilla, mango, banana and strawberry — are the base for a set custard or a trifle layer. The jelly crystals run to strawberry, mango, orange, pineapple and banana, and set into the layer a falooda or a dessert trolley is built on. The jelly falooda mix and the roasted vermicelli are the two components a falooda specifically needs. For a kitchen the appeal is that these are ambient, keep without refrigeration and produce a consistent set from a measured pack — which matters when a dessert is being made in volume for a buffet. For a retail shelf they are Ramadan and celebration stock, and the falooda components move together rather than separately. Stock is held in temperature-controlled and dry warehousing in Malé and moves out on scheduled sea freight and speedboat runs from Malé harbour direct to resort supply docks across North and South Malé, Ari and Baa Atolls.
