Shan Spicy Dry Aloo

A quick potato dish that works as a side or holds its own as a main with roti or rice — lightly crisp outside, soft within, and coated in spice throughout. Ingredients List

  • For boiling the potatoes
  • 300 g peeled and chopped potatoes (½-inch pieces)
  • 3 cups water
  • ½ tsp salt
  • For the masala
  • ¼ cup olive oil
  • 1 tsp cumin seeds
  • 1/3 cup finely diced onion
  • 4 finely chopped garlic
  • 1 tbsp Shan Curry Powder
  • 1 tsp ground coriander
  • ½ tsp chilli powder
  • 1 tsp chilli flakes
  • ½ tsp turmeric powder
  • 1 tsp lemon juice
  • 1 finely chopped green chilli
  • 2 tbsp finely chopped coriander

Step-by-Step Method

    Firstly, peel and cut 300g potatoes into ½ inch pieces and set them aside.

    Boil 3 cups water in a medium sized pot, add ½ tsp salt and stir it a little using a spoon on high heat. Let it heat up for 6 to 7 minutes or until the water is bubbling and add the potato pieces into the boiling water. Boil the potatoes for 8 minutes or until the potatoes are fully softened (when you stick a fork into the potato, it should go right through in without much force).

    Once the potatoes are fully cooked through, drain the water and transfer them into a bowl. Set this aside.

    Into another medium sized pot, add ¼ cup olive oil and heat it on high for 30 seconds. Then add 1 tsp cumin seeds and stir a bit using a wooden spoon for one minute or until it starts sizzling.

    Then add 1/3 cup finely diced onion and 4 finely chopped garlic and stir for 3 minutes or until the onions are soft.

    Turn the heat to low and add the cooked potato pieces along with 1 tbsp Shan Curry Powder, 1 tsp ground coriander, ½ tsp chilli powder, 1 tsp chilli flakes, ½ tsp turmeric powder, 1 tsp lemon juice and 1 finely chopped green chilli and mix well. Cook for 3 minutes while stirring occasionally.

    Once done, turn the heat off and add 2 tbsp finely chopped coriander. Give it a good final mix. Serve alongside some roti or rice and enjoy!
