Tortilla Pizza

Few things in the pantry stretch as far as a pack of tortillas — wraps, pinwheels, enchiladas, burritos, tacos. This tortilla pizza might be the quickest use of all: a handful of ingredients and it is on the table. We have built it on Deli Sun Soft Flour Tortillas, one of the lines we bring in and supply nationwide. A pack holds 8, and they freeze well, so they are worth keeping on hand for the evenings when nothing has been planned. Serving size: 2

Ingredients List

  • 2 eggs
  • ¼ tsp salt
  • 1 tsp oil
  • ½ cup diced chicken luncheon meat
  • 3 tomato slices
  • ½ cup shredded mozzarella cheese
  • 1 Deli Sun Soft Flour Tortilla (7-inches in diameter)
  • 1 tbsp chopped spring onion
  • ¼ tsp chili flakes

Step-by-Step Method

    To start off, add the eggs along with salt to a bowl. Then whisk until the salt is well blended with the eggs. Keep aside.

    Next, add 1 tsp oil to a pan and heat it up. Add in the diced chicken luncheon meat and sauté for 2 minutes or until it starts to get a brownish color.

    Then place the tomato slices in the middle of the pan.

    Slowly pour the whisked eggs on top of the meat and tomato slices, covering them nicely. You can swirl the pan to spread the eggs evenly as well.

    Now sprinkle half of the shredded mozzarella cheese (which is ¼ cup) on top of the egg layer. Then place the Deli Sun Soft Flour Tortilla on top of the cheese layer. Keep it on low heat until the eggs are cooked.

    After the eggs are cooked, flip the tortilla to the other side. This time the Deli Sun Soft Flour Tortilla will be touching the pan with the rest on top.

    Sprinkle the spring onion on top evenly, along with the rest of the cheese (¼ cup) and chili flakes. Cover the pan with the lid and cook on low heat until the cheese is all melted.

    Remove the tortilla pizza from heat. Lastly, cut it into quarters. That’s it.
