Overnight Oats

Breakfast that makes itself overnight is hard to argue with — a few minutes of preparation, then fruit, nut butter, nuts or seeds piled on in the morning however you like. We make ours with Pascual Vive Soy Oat Milk, from the Pascual range we bring into the Maldives. The drink is 100% plant-based and high in calcium and vitamins D and B12, which makes it a straightforward choice for anyone lactose intolerant or allergic to cow's milk protein. It also does good work in other drinks and desserts. Serving size: 2

Ingredients List

  • For the oats
  • 2/3 cup oat flakes/rolled oats
  • 2/3 cup Pascual Vive Soy Oat Milk
  • 1/3 cup vanilla Greek yogurt
  • 2 tbsp honey
  • 1 ½ tsp chia seeds
  • ¼ tsp vanilla essence
  • For topping
  • 10 blueberries
  • 6 slices of banana
  • 4 chopped strawberries
  • 2 chopped dates

Step-by-Step Method

    To a small bowl, add 2/3 cup oat flakes/rolled oats, 2/3 cup Pascual Vive Soy Oat Milk, 1/3 cup vanilla Greek yogurt, 2 tbsp honey, 1 ½ tsp chia seeds and ¼ tsp vanilla essence. Mix everything together using a spoon.

    Distribute the oat mixture into two small jars/glasses. We used 2 glasses of around 3-inches wide and 3-inch in depth.

    Top each glass with 5 blueberries, 3 slices of banana, 2 chopped strawberries, and 1 chopped date. You can substitute with any fruits or nuts of your choice.

    Cover the glasses with food wrap or a lid. Place them in the refrigerator for 12 hours or overnight. These are good to keep in the refrigerator for 3-5 days. If you plan to keep it for that long, we would recommend adding the toppings right before serving, so the flavours are still fresh.
