Margarine Cake
Made with margarine rather than butter, this cake bakes soft and moist with a slightly denser crumb — and it stays moist for days, which is more than can be said for most. We use Remia Margarine, part of the Remia range we distribute here. Smooth and creamy, made from vegetable oils, it is an affordable stand-in for butter that still brings flavour and moisture to cakes and pastries.

Ingredients List
- 1 cup sugar
- 1 cup flour
- 3 eggs
- 1 tsp vanilla essence
- ¼ tsp baking powder
- 1/3 cup full cream milk
- For topping the cake
- Canned whipped cream
- 4 strawberries
Step-by-Step Method

Into a larger bowl, add ½ cup room temperature Remia Margarine. Using a hand mixer, beat it until the softened margarine becomes fluffy and smooth. This will take 1 minute.

Then, add in 1 cup sugar, increase the speed to medium and continue beating for 2-3 minutes or until the mixture fluffs up and turns lighter in colour.

Reduce the speed to low, then add the 3 eggs one by one while beating the mixture.

Once the eggs have been mixed in well into the batter and you don’t see any egg streaks, gradually add 1 cup flour, adding ¼ cup in at a time until you run out and it is well incorporated. Beat the mixture at low speed for 2 more minutes to avoid the flour clumping up.

Once the batter is fully mixed and becomes smooth, add in 1 tsp vanilla essence and ¼ tsp baking powder, and beat for 1 minute. While beating, slowly add in 1/3 cup full cream milk and keep beating for another 2-3 minutes. Now, the margarine cake batter is ready.

To prepare your baking tray, line your tray (we used 12x8 inch sheet tray) with baking paper. Then, pour in the cake batter and smooth the top to even it out.

Pre-heat the oven for 10 minutes, and then put in the margarine cake to bake at 180 degrees for 35 minutes or until a toothpick inserted into the centre of the cake comes out clean.

Once baked, take the cake out of the oven, and let it cool down to room temperature for around 20 minutes.

Then, cut the margarine cake into squares and serve it with a dollop of canned whipped cream and a piece of half-cut strawberry on top of each slice. Enjoy!
