Chicken Breast with Chicken 65
This takes its cue from Chicken 65 but skips the bite-sized pieces, marinating a whole chicken breast in the same spices instead — an easy route to a quick lunch, dinner or something prepped ahead. The marinade is Shan Chicken 65, part of the Shan range we supply. The ready-to-use mix is dense with aromatic spice, which gets you that signature flavour at home without assembling it yourself. Serving Size: 1-2 people

Ingredients List
- 1 skinless, boneless chicken breast (170-250g)
- 4 tsp Shan Chicken 65
- 3 tbsp plain Greek yoghurt
- 2 ½ tbsp unsalted butter
Step-by-Step Method
- 1
Cut the 170–250g skinless, boneless chicken breast in half. Score each piece with 3 to 4 shallow cuts on both sides to help the marinade absorb better.
- 2
In a bowl, combine 4 tsp Shan Chicken 65 and 3 tbsp plain Greek yoghurt to make a thick marinade.
- 3
Add the chicken to the marinade and coat both pieces evenly using your hands or tongs. Cover the bowl and refrigerate for 30 minutes.
- 4
Melt 1½ tbsp unsalted butter in a pan over medium heat. Add the marinated chicken and cook for 5 to 7 minutes on the first side, checking occasionally to prevent it from burning.
- 5
Flip the chicken, add the remaining 1 tbsp unsalted butter, and cook for another 5 to 7 minutes. Move the chicken around the pan occasionally so it doesn't stick, and spoon the melted butter over the chicken as it cooks.
- 6
If you'd like a darker golden colour, increase the heat to high for the last 30 to 60 seconds only.
- 7
Switch off the heat and let the chicken rest in the pan for 3 to 5 minutes before serving.
