Almond Milk Chai Latte
Chai is the traditional Indian tea of spices, black tea and milk. This almond milk version keeps the classic chai spicing, adds vanilla, and finishes with plenty of foam. We make it with Pascual Vive Soy Almond Milk, part of the Pascual range we bring into the Maldives. It is high in calcium, includes vitamins D and B12, and is low in fat — 100% plant-based, with a nutty flavour that suits chai, and a good option for anyone lactose intolerant.

Ingredients List
- 1 -inch piece of ginger thinly sliced
- 3 -inch cinnamon stick
- 8 cardamom pods (ends snipped off)
- 3 cloves
- 6 black peppercorns
- 2 cups Pascual Vive Soy Almond Milk
- 2 ½ tbsp honey
- ½ tsp vanilla essence
- 3 black tea bags
- ¼ cup Pascual Vive Soy Almond Milk (for frothing)
- A pinch of cinnamon powder (for topping)
Step-by-Step Method

To a small pot, add 1-inch piece of ginger thinly sliced, 3-inch cinnamon stick, 8 cardamom pods (ends snipped off), 3 cloves, and 6 black peppercorns. Toast on low heat for 2 minutes, while stirring occasionally.

Then add in 2 cups Pascual Vive Soy Almond Milk, 2 ½ tbsp honey, and ½ tsp vanilla essence. Bring the mixture to a boil on high heat, which will take around 4 minutes.

Then turn down the heat to medium-low and simmer for 15 minutes, while stirring occasionally.

Turn off the heat and add in 3 black tea bags. Let the tea seep for 5 minutes, then squeeze the excess tea into the pot using a spoon or spatula. Carefully, strain the chai into a jug.

Pour the chai equally into 2 glasses (our glasses were 3-inches in depth and 3-inches wide).

To make the froth, add the ¼ cup Pascual Vive Soy Almond milk into a new small pot and heat on low heat for 3 minutes, until it’s steamy.

Add the steamed milk to a small glass and froth using an electric frother for around 3 minutes or until foamy. Scoop the foam with a spoon and divide the foam equally between both glasses equally (some milk may be left over but that is okay).

Lastly, sprinkle a pinch of cinnamon powder on top of each glass.
